Issy,
I ran into this when I was trying to cast my daughters hand. Something you might want to try is an alginate that I found from Accu-Cast (http://www.accu-cast.us). They have an alginate that changes color to indicate when it is going to set. It has a warmer temperature and changes from pink to white just before setting. If you ran a few tests you might be able to narrow it down to about 15 seconds or so of having to hold still. Hopefully this helps.
