Bruno,
I routinely repair plaster casts by first painting the surface with gesso. This primes the surface and seals it so that you can add new plaster that will stick to the surface. (same as you would do with new drywall in your home)
For small repairs on primed surfaces, I mix the plaster with gesso and a little water to make a paste.
