Hi,
Here in Mexico things a quite different. If you get a cheque and it's not covered by the client ... you have to deal with the client. I simply refuse cheques today and I write it on the quote email.
What my advice is: pick up the phone and call the client. Tell her your surprise and wait her to give her side of the story. If you don't reach an agreement there, then post the letter and bring her to court. If she doesn't sign for the letter, you can find someone who will server it personaly in her hand and will testify of it in court.
The advice of my mexican wife would be: someone who doesn't want to pay you will not. It will cost you more money on time and energy to to get the money. So get over it and find a way to sell more and get back that money. I sometimes agree on that point of you on small money even if I found it unjust. It's cultural.
