Wow, I have never been so pleased that my turn around on work is so slow!
I take weeks to finish as cast, and now I am really happy that I do so, for
the first time. I had no idea it took so long for the plaster to dry out
but that does explain why I don't get mould on my pieces, some sit on the
side waiting for attention for at least two weeks before I find time in my
schedule.......I can now use this as a selling ploy!!!

Wear a mask and gently sand off the black mold. It's carcinogenic, so
you mustn't forget the mask. You can get anti-fungal sprays from DIY
stores to help prevent it coming back, but I think you need to look
at why it was there in the first place.
It doesn't sound like you are drying your pieces effectively. Make
sure they are in a nice, airy, dry room to dry out with space for air
to flow around them and not too near any heat sources and give them
several weeks to do so. It makes me cringe when I see websites
advertising one week turnaround of lifecasts because moisture is
still locked deep inside the casts and takes many weeks to come to
the surface (depending on the thickness of the cast and the type of
plaster used). When TOTALLY dry (not to be confused with the basic
setting time given on the instructions), the plaster should have
turned a beautiful white colour rather than grey/blue/cream tinged.
If you want to be fancy, you can even get those little gadgets that
test for damp in houses (but only the more expensive ones seem to
have any level of accuracy). But the most important thing is that
plaster can reabsorb moisture just as easily as it gives it up to the
air. So don't have it near windows/open vents/anywhere damp. And you
need to seal the piece whether or not you are painting it. There are
many clear sealants suitable, but a very basic one is a mixture of
1:1 PVA glue to water. That's the cheapest and most basic but you
will need to experiment to find a sealant you like as some yellow and
some blue over the years. Water based ones are best, in my opinion.
Matt sealants may need a few coats to prevent black mould, but glossy
sealants can make lifecasts look plastic-y and cheap. Another good
one is full fat cow's milk, but you need at least 5 coats of that for
it to be worth doing, so in terms of time it's only worth it for
special pieces, but does give a lovely marble-like glow to the piece.
