You have heard some good suggestions, but the fact is, plaster should
do just fine in a bathroom. I assume it is very humid but out of the
range of shower-spray. Plaster will take in a lot of water vapor, and
breathe it in and out as the relative humidity changes. This won't
hurt it. A layer or two of paint may be pushed off the surface by
vapor from the inside. Consider paints and finishes that really
penetrate, like thinned shellac and i suppose, the milk treatment.
All surfaces must get the same sealing or water (vapor) will enter.
