Kim,
I have found using various resins and polymers that there is in face a shelf life with these and they start to thicken over time once they have been opened. The fact that there is air in the container and then resealed is enough to begin the aging process.
I would recommend a brand new container and see how that goes. Verify that you are mixing exactly as specified and you should be ok.
