Have you looked at summer course offerings at Arrowmont, in Gatlinburg?
With plaster bandage pieces where you want the mold to be the sculpture, practice your technique. Use smaller pieces, narrower roll widths. Hands can't get superfancy because you don't get to surround fingers.
A giant of sculpture, George Segal, wanted that rough look of the outside of the mold. So that's where he would stop.
